EXIF can include GPS coordinates (latitude/longitude), camera make and model, lens info, date and time, shutter speed, ISO, aperture, and flash usage.

Can I remove only GPS data selectively?

Currently all EXIF data is removed in one pass. Selective removal is planned for a future update.
